monday motivation: balsamic + parmesan roasted cauliflower

Time for our Monday Motivation feature! We’ve done breakfast, we’ve done lunch…now, let’s tackle dinner. For us, the devil is in the side dishes. Loading up on bread, mashed potatoes, etc totally cancels out our healthy (usually) healthy entrees, not to mention our healthy breakfasts and lunches. So we chose this delicious roasted root veggie for today’s recipe (adapted from EverydayHealth). We promise you won’t miss the rolls and potatoes! In fact, per Joe, this “tastes like delicious vegetable CANDY.”

Balsamic + Parmesan Roasted Cauliflower
replace your usual potato side dish with healthy, flavorful roasted cauliflower.

Balsamic + Parmesan Roasted Cauliflower

(Prep Time: 10 mins / Cook Time: 30 mins / Total Time: 40 mins / Yield: 4 servings)

What You Need:

  • 1 head cauliflower, cut into florets (about 8 cups)
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon dried marjoram
  • 1/4+ teaspoon sea salt
  • fresh ground pepper, to taste
  • 2+ tablespoons balasmic vinegar
  • 1/2 cup shredded Parmsan cheese

What You Do:

  • Preheat oven to 450°F.
  • Toss together cauliflower, oil, marjoram, salt and pepper. We mixed everything up in a gallon Ziploc bag – our tried and true trick for mixing veggies with oil and spices. You get an even coat every time.
  • Roast on a large rimmed baking sheet (we lined the sheet with aluminum foil for easy clean-up) until cauliflower starts to soften and brown on the bottom, about 15 to 20 minutes.
  • Toss the cauliflower with vinegar and sprinkle with cheese.
  • Return to the oven and roast until the cheese is melted and any moisture has evaporated, 5 to 10 minutes more.

operation detox.

Girls! This cucumber detox smoothie is not only full of vitamin C, potassium and magnesium but, it also contains silica, which improves your complexion and keeps skin glowing. So refreshing for the Spring days ahead!

The Glitter Life Detox Smoothie
fresh + fantastic.

All you need:

1 cucumber
1/2 Bosc pear
3-4 ice cubes

Directions
Place cucumber into your juicer with the skin on. You can also peel the cucumber and place it into a food processor. Either way! Purée the cucumbers for about two minutes. Pour the into a cheesecloth or strainer and use a spoon to separate the mash from the juice. (If that’s too much work, peel the cucumber, slice into quarters, and blend it with a little water. Done and done.)

Blend the cucumber juice and pear in a powerful blender until smooth and creamy. Thin with water or thicken with ice, if desired. Ready. Set. DETOX.

Happy Wednesday, glitter girls!

We know, we know. One of your New Year’s resolutions is to work out / get in shape / be more active / lose weight. Here are some tips to get you going!

Fuel Up: Often, it’s a Herculean task just to get ourselves to the gym. We can’t be bothered with a pre-workout snack, too! Turns out, eating before you sweat is a big deal–it jump-starts your metabolism (can’t argue with that). It’s also important to eat after you exercise, so you don’t start burning muscle (eeek!). Allison at Lauren Conrad has some great tips for what to eat before your workout (no matter what time you like to hit the gym) and after. Bottom line: bananas are our friends.

Dress the Part: Is it just us, or is exercising easier when you love what you’re wearing? We’ve talked about workout wear before, but here are a few new suggestions.

1) Sports Bra. If you don’t like your sports bra, you won’t like exercising. L’s favorite is the New Balance Bonita Run Crop. The back straps as well as the band are adjustable, so you get a much more precise fit than most sports bras.

2. Top. J loves this top from LuluLemon. “I’ve basically worn it every day since I got it for Christmas!”

3. Leggings. We both love C9 by Champion compression leggings. And we may or may not admit to wearing them as pants on our non-workout days.

4. Shoes. L is a big fan of the Nike Lunarglide and the New Balance Minimus (depending on your fitness goal).

be sure to start slowly when you switch to the Minimus. the minimal cushioning takes some getting used to.

The Workout: If you think you’d enjoy running, try a Couch to 5K program. Running a 5K is a really reasonable goal, and you can find a race just about every weekend, no matter where you live. This program tells you exactly how to train to run a 5K in six weeks.
