eat fresh.

Sometimes you just want a simple, fresh, small salad. This recipe is prefect to prepare the night before and brown bag it to work the next day. We’re all about that.

The Glitter Life Mini-Caprese-Salad
easy and delicious.

 

Mini Caprese Salad

Ingredients:

1 pint cherry tomatoes, halved (try red and yellow for a little color)

8 ounces fresh mini mozzarella

18 basil leaves, chopped

4 tablespoons olive oil

1/2 teaspoon Kosher salt

1/2 teaspoon freshly ground pepper

Directions:

Add the cherry tomatoes and mozzarella to a medium sized bowl. Drizzle olive oil. Add basil, salt and pepper. Gently toss. Enjoy!

garbanzo bean salad.

One of our new year’s resolutions is to eat healthier (we know, we say this every year). One giant first step to eating healthier is brown-bagging lunch. Fixing healthy, delicious fare at home and bringing it to work dramatically decreases the likelihood of that 3pm run to LaBerry (L) or Starbucks (J).

This filling Garbanzo Bean Salad (adapted from a Rachael Ray recipe) is full of fiber, folic acid and other good stuff. Red pepper flakes help rev your metabolism and keep you reaching for your water bottle. Serve a big scoop for lunch over mixed greens.

Garbanzo Bean Salad

What You Need:

  • 2 cans organic garbanzo beans (chickpeas) (15 ounces each), rinsed and drained
  • 1 small red onion, finely chopped, or a few scallions, chopped (white and some green parts)
  • 1 small red bell pepper, finely chopped
  • A few ribs celery and leafy tops, chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (or more, to taste)
  • 2 tablespoons red or white wine vinegar
  • 1 tablespoon extra virgin olive oil (L leaves this out – you don’t really need it)
  • Sea salt, to taste
What You Do:
  • Combine the chickpeas with the onions, peppers, celery, garlic and crushed red pepper in a medium size bowl.
  • Dress the salad with the vinegar, oil (optional) and sea salt.
  • Makes six side portions or four lunch portions.

filet mignon sliders.

HAPPY NATIONAL FILET MIGNON DAY!

Filet mignon (which translates as a “cute” or “dainty” steak) is sure to impress any crowd. Keep it casual and use filet mignon in delicious (and fun to eat) sliders. Tonight’s recipe:

The Glitter Life Filet Sliders

Filet Mignon Sliders {adapted from Epicurious}

  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 8 ounces button mushrooms, thinly sliced
  • 4 ounces shiitake mushrooms
  • 2 large shallots, minced {about a ½ cup}, divided
  • 4 garlic cloves, pushed through a garlic press, divided
  • 1 tablespoon chopped fresh thyme
  • 4 1½ inch-thick filet mignon steaks
  • ¾ cup Madeira
  • 1½ cups beef broth {preferably homemade}
  • ½ cup whipping cream
  • Bakery-fresh mini brioche slider buns, split and toasted
  1. Preheat oven to 400°F.  Place a baking sheet lined with parchment paper into the oven to heat.
  2. Melt 2 tablespoons butter with 1 tablespoon oil in heavy large skillet over medium heat. Add mushrooms and sauté until tender, about 10 minutes. Add ¼ cup shallots and half of garlic and sauté until shallots are soft, about 3 minutes. Stir in thyme; season with salt and pepper. Transfer mushroom mixture to medium bowl and set aside.
  3. Melt remaining 1 tablespoon butter with 1 tablespoon oil in same skillet over medium-high heat. Sprinkle steaks with salt and pepper. Add to skillet and sear about 4 minutes per side. Transfer steaks to the heated baking sheet and check their internal temperature with a meat thermometer {for medium rare, the finished steaks should register 130°F} and return to oven to finish cooking for approximately 5-10 minutes or until the meat registers an internal temperature of 130°F.  When finished, remove steaks to a cutting board and allow to rest for 10 minutes before thinly slicing.
  4. Meanwhile, add remaining ¼ cup shallots and garlic to same skillet. Sauté 2 minutes. Add Madeira and boil until reduced by half, about 3 minutes. Add broth and boil until mixture is reduced to 2/3 cup, about 6 minutes. Add cream and boil until sauce thickens slightly, about 2 minutes. Stir in reserved mushroom mixture. Season sauce to taste with salt and pepper.  Remove pan from heat.
  5.  To assemble sandwiches, place 3-4 slices of filet on the bottom of each toasted bun.  Spoon some of the mushroom sauce over and cover with the top of the bun.  Serve immediately.

friday five: weekend getaway.

HAPPY FRIDAY!

We’re heading to Lake Oconee this afternoon for a MUCH needed weekend together. Here’s what the next 48 hours look like for us.

1. Cocktail: No boring wine glasses for us this weekend! L is bringing mason jars and paper straws to hold our cocktails. Stay tuned to see if we use J’s sparklers.

2. Appetizer: As J was cruising pinterest looking for an app to make for us this weekend, she came across this alternative to a full caprese salad. Easy to transport and perfect for us to munch on while getting ready. We had to graduate from Goldfish some time.

3. Pool Accessory: Everyone. Cross your fingers and toes that the rain holds out long enough to give us a pool day. We need it. And also this Sunnylife San Remo Beach Towel for lounging.

kale + quinoa salad.

Kale + Quinoa Salad

L’s sister-in-law Jaclyn brought a delicious kale quinoa salad to a recent family gathering in Statesboro. The healthy and delicious dish had everyone talking (in a good way)! In true glitter girl spirit, she agreed to share the recipe with us.

What You Need:

  • a few cups of cooked quinoa
  • a few cups of chopped kale
  • crumbled feta
  • golden raisins
  • chopped red onion
  • a few TBSP of dressing (balsamic vinegar, olive oil, fresh lemon juice, spicy brown mustard, herbes de Provence). Jaclyn says: I’ve made the dressing, but I think any olive oil balsamic blend would work. I only used 2 – 3 TBSP of Organicville Herbes de Provence Vinaigrette for the big bowl (doubled recipe) I took to the reunion.

What You Do:

Just mix it all up and chill for a few hours to blend flavors. This salad will keep for several days…as long as you don’t eat it all at once.

you don’t have to add this much kale! i love kale–probably went a little overboard.

This is an easy and forgiving recipe. I couldn’t find plain quinoa at the grocery in Statesboro, so I used an Olive Oil and Rosemary flavored box. Totally fine! I also added a little basil from my herb garden. Chopped walnuts and diced carrots could turn this side salad into a hearty meal. Bottom line: add whatever sounds good to you.

kale mango salad.

Hiiiiiii!

This past weekend, Jay’s sweet step-mom, Beth, made this delicious salad. I had to capture the process to share with you all because it is out of this WORLD! And healthy, too: check out this link to read about the benefits of eating kale.

Ingredients:

  • 8 cups of torn/stemmed kale
  • 1 lemon juiced
  • 2 tbsp honey
  • Sea salt
  • Olive oil
  • Coarse ground black pepper
  • 1 medium mango
  • Pine nuts or walnuts toasted

Method:

  • Mix in large bowl: kale, drizzle olive oil, half squeezed lemon and sea salt. Knead together until soft (about a minute).

  • In another bowl mix 1/2 cup olive oil, honey, the other half of the lemon. Whisk together and pour over kale.

  • Dice the mango and fold it into the salad.

Add Mango to salad.

  • Add black pepper to taste (more is better!) Refrigerate overnight. This will stay fresh for a week! Good alone or with fish.
