it’s game-day.

So. Real talk. We could eat a cheese plate for every meal. Easy. But sometimes we need to switch it up! Never fear… this quick and easy dip from Damn Delicious has you covered. A crowd-pleaser for your football watching this weekend!

Damn Delicious | Beef Enchilada Dip

Prep Time 5 minutes

Cook Time 10 minutes

Total Time 15 minutes

 Yield 6 servings
This meaty, cheesy enchilada dip comes together in just 15 minutes, and is the perfect crowd pleasing appetizer!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 1/2 cups enchilada sauce
  • 1 cup roasted corn kernels
  • 1 (4.5-ounce) can chopped green chiles
  • 1 cup shredded Monterey Jack cheese, divided
  • 1 cup shredded cheddar cheese, divided
  • Kosher salt and freshly ground black pepper, to taste
  • Tortilla chips, for serving

Instructions

  • Preheat oven to 400 degrees F. Lightly oil two 10-ounce ramekins or coat with nonstick spray. *I used these amazing Le Creuset Cocottes instead of ramekins. Highly recommend scooping a few for your kitchen!*
  • Heat olive oil in a saucepan over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat. Stir in enchilada sauce, corn, chiles, 1/2 cup Monterey Jack cheese and 1/2 cup cheddar cheese; season with salt and pepper, to taste.
  • Divide the filling evenly into the ramekins and top with remaining cheeses.
  • Place into oven and bake until bubbly around the edges, about 5 minutes. Let cool 5 minutes before serving.

caramelized onion dip.

Football season is upon us. Since we’re not quite ready to tailgate, I spent last Saturday evening watching football at home and eating the whole bowl having a ladylike taste of this Caramelized French Onion Dip by Atlanta blogger Waiting on Martha. Paired with store-bought kettle-cooked chips, it’s just the sort of easy-yet-impressive-enough-for company (or the group tailgate) snack I adore.

Note: Because I really, really love onions, I did some tweaking to the original recipe. If you (or your SO) are not of similar mind, you may want to use one fewer onion.

What You Need:

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 Vidalia or other sweet yellow onions, sliced
  • 2 cloves garlic, minced
  • 2 cup sour cream (use low-fat if you like)
  • 1/4 cup chopped chives, plus more for garnish
  • 1/2 tbsp Williams Sonoma Garlic & Herb French Fry Seasoning (I couldn’t find this, so I used Cajun Seasoning…I think you could use any savory seasoning mix)
  • 1/2 tbsp Worcestershire sauce
  • 1 tsp ground white pepper
  • kettle cooked potato chips (I prefer Lay’s Reduced Fat Kettle Cooked chips)

What You Do:

  • In a Dutch oven or heavy saucepan, heat the butter and olive oil until melted. Saute the onions and garlic until soft and brown, about 20-25 minutes.
  • Remove from heat and let cool to room temperature. Once cool, chop up mixture and set aside.
  • In the meantime, mix the sour cream, chives and all seasonings.
  • Add caramelized onions and mix thoroughly.
  • Refrigerate at least 30 minutes or overnight.
  • Garnish with chives and serve with kettle cooked chips.

We totally forgot to include our friend Jen’s awesome astroturf mani in our weekend wrap-up. Here it is, in all its green glory.

We begged Jen to share the how-to, and since she’s 100% Team Glitter, she obliged.

Astrotuf Mani:

  • Doing one nail at a time, paint on one medium coat of Essie’s Going Incognito.
  • Doing one nail at a time, sprinkle green tinsel glitter (available at craft stores) over the polish. Lightly pat it down so that it really sticks to the polish.
  • Let dry for five minutes. Apply a generous clear coat.

Wait, is there a football game on Sunday?

Girls, we can’t lie. We are BUMMED that our beloved Atlanta Falcons won’t be taking the field on Sunday. We do love a party though, so we’re making the most of it and planning to take part in the Super Bowl festivities anyway. Whether you’re invited to a party or hosting your own, today’s Friday Five is here to inspire you.

1. Classic Appetizers. If you’re a guest, show up in a party mood and bring an appetizer. We love apps that introduce new twists on old favorites. Here are our picks:

2. Sliders. If you’re the host, ask guests to bring appetizers while you take responsibility for the main course. Chili is a Super Bowl party staple, but why don’t you get creative and serve sliders? They’re a little more work, but they’re cute, easy to grab, and don’t require silverware. Buzzfeed lists thirty slider recipes (some ridiculous, most delicious). Enlist a friend or two to help you assemble them.

Happy Monday, glitter girls!

friday five.

It’s FRIDAY FRIDAY FRIDAY, glitter girls!

We’ve had a very productive week here at the Glitter Life. We’ve been selected as contributors to Lucky Magazine’s online community, and we are SUPER excited to announce that we have been selected as a Birchbox affiliate (more details on that later)! After such a busy week, we’re definitely looking forward to the weekend. Here’s our to-do list!

1. Watch THE BIG GAME. This Sunday, the Atlanta Falcons take on the San Francisco 49ers at the Georgia Dome to see who will head to New Orleans to compete in the Super Bowl. Even if you’re not a big football fan, you have to admit it’s been fun to see the Falcons advance so far this year. Stay tuned to our Twitter feed (@glitter_blog_xo) on Sunday as J will be tweeting LIVE from the game.

2. Try a new recipe. Speaking of football, these hummus cups from Inspired Taste are the perfect thing to make if you’re watching the game at home (or someone else’s home – they travel well). It’s easier to say no to chili cheese dip if you have a healthy, delicious alternative!

3. Paint Our Nails (duh).  Since we’re Falcons fans–rise up!–we’re going to attempt this red and black manicure we found on Habisky Nails.

4. Play in our closets. Yall, the weather has been WEIRD here lately. It’s been in the seventies all week, but it’s supposed to be freezing again this weekend. Since we’re saving our clothing dollars for new spring styles, we’re going to play stylists in our closets and create some fun transitional outfits from pieces we already own.

5. Catch a movie. The oscar noms were just announced, and we have to admit… only one us (J) has seen any of the Best Picture nominees. She *highly* recommends Django Unchained ,btw. L really wants to see Argo, and next on J’s list is Zero Dark Thirty. So make some popcorn and relax for a few hours before the work week begins again!

Happy Tuesday, glitter girls!

This weekend J and I had a glitter reunion in Athens, GA for the GSU/UGA (our alma maters, respectively) game. Athens is a beautiful college town–we ate great food, drank great wine and had a blast in general. Witness:

Happy Friday, glitter girls!

We’ve had a crazy-busy week. Down in Statesboro, L finally launched the new website for her stores Social and Dish. Up in Atlanta, one of J’s restaurants was the filming location for the upcoming Anna Nicole Smith biopic on Lifetime. As our friend Mags says, “It’s an inspiring story.”

On that note, let’s get the weekend started! Here’s your Friday Five.

1. Nails. J and I are going goth this weekend. Halloween is almost here, we’re feeling spooky, and sometimes a nude nail just doesn’t cut it. Try Chanel Black Satin or Essie Blacks.

2. Saturday Skinnies. Dark-wash skinnies are fine for Fridays, but Saturday night calls for something more special. These reptile print skinnies from L’s new website are super comfy, with just the right amount of stretch. Pair them with a black or jewel-tone slouchy sweater and nude heels. Sssssssssexy.

3. Sophisticated Comfort Food. Gah, how good does this pumpkin mac and cheese look?! L whipped up this recipe last night and wished she was able to send J a smell-o-gram. That. Good.

4. Georgia-Florida Game. Those you in the south are familiar with the annual University of Georgia v. University of Florida match-up, also known as “The World’s Largest Cocktail Party.” Neither of us is going to Jacksonville, but we’re definitely going to watch these two top teams duke it out on TV. No matter what game you’re watching on Saturday, be sure to make your tailgate nice and pretty with our tailgate tips.

5. Brunch. Now that it’s getting cooler (finally), we can actually handle eating outside. What sounds better than a lazy Sunday brunch al fresco?
