So. Real talk. We could eat a cheese plate for every meal. Easy. But sometimes we need to switch it up! Never fear… this quick and easy dip from Damn Delicious has you covered. A crowd-pleaser for your football watching this weekend!

Damn Delicious | Beef Enchilada Dip

Prep Time 5 minutes

Cook Time 10 minutes

Total Time 15 minutes

Β Yield 6 servings
This meaty, cheesy enchilada dip comes together in just 15 minutes, and is the perfect crowd pleasing appetizer!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 1/2 cups enchilada sauce
  • 1 cup roasted corn kernels
  • 1 (4.5-ounce) can chopped green chiles
  • 1 cup shredded Monterey Jack cheese, divided
  • 1 cup shredded cheddar cheese, divided
  • Kosher salt and freshly ground black pepper, to taste
  • Tortilla chips, for serving

Instructions

  • Preheat oven to 400 degrees F. Lightly oil two 10-ounce ramekins or coat with nonstick spray. *I used these amazing Le Creuset Cocottes instead of ramekins. Highly recommend scooping a few for your kitchen!*
  • Heat olive oil in a saucepan over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat. Stir in enchilada sauce, corn, chiles, 1/2 cup Monterey Jack cheese and 1/2 cup cheddar cheese; season with salt and pepper, to taste.
  • Divide the filling evenly into the ramekins and top with remaining cheeses.
  • Place into oven and bake until bubbly around the edges, about 5 minutes. Let cool 5 minutes before serving.

*Note: You may have trouble finding this gem of a restaurant because their sign simply says “Bar and Grill” so keep an eye out.

baked macaroni and cheese.

Baby Joe turned three last week (maybe you heard?), and when L asked him what he wanted for his birthday dinner, he said “macaroni and cheese!” This baked macaroni and cheese turned out perfectly and will definitely make an appearance again.

The Glitter Life Mac and Cheese

Baked Macaroni and CheeseΒ by Alton Brown

Ingredients

  • 1/2 pound elbow macaroni
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 tablespoon powdered mustard (don’t have any on hand? no big deal. just leave it out.)
  • 3 cups milk
  • 1/2 cup yellow onion, finely diced
  • 1 bay leaf
  • 1/2 teaspoon paprika
  • 1 large egg
  • 12 ounces sharp cheddar, shredded
  • 1 teaspoon kosher salt
  • Fresh black pepper
  • Topping:
  • 3 tablespoons butter
  • 1 cup panko bread crumbs

Directions

  • Preheat oven to 350 degrees F.
  • In a large pot of boiling, salted water cook the pasta to al dente.
  • While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it’s free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
  • Temper in the egg. (Don’t know how to do that? Learn howΒ here.) Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
  • Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.

This was DELICIOUS and can totally be made ahead. Just cover, refrigerate and bake when ready. Add a few extra minutes of baking time if it comes out of the refrigerator.Β Read moreΒ here.
