Cabbage Fries

Ingredients

  • 1 head cabbage
  • olive oil
  • coarse sea salt
  • paprika
  • chili powder

Remove the outer leaves of the cabbage.  Slice  cabbage into wedges. It’s okay if the wedges come apart a little. Toss wedges with olive oil, sea salt (not too much), paprika and chili powder.  Transfer coated wedges to cookie sheet lined with aluminum foil. Roast at 425 degrees for 40-50 minutes (you want a little char on the leaves!). Serve with spicy ketchup.

Spicy Ketchup

  • ketchup
  • sriracha sauce (the Asian version of Tabasco–you can buy it at any grocery store.  even if you live in Statesboro, Georgia.)

Mix ketchup with sriracha sauce to taste.  Go slowly–the stuff is HOT.

I continue to be obsessed with sriracha sauce. Mixed with  ketchup, it makes a tasty-spicy accompaniment to cabbage fries. Or real fries, whatever.
